163. Nigeria: Suya

Nigeria, not my favourite country at the moment… since a Nigerian phone number hacked my Instagram account,… Nigeria, often referred to as the “Giant of Africa,” Nigeria is not only the most populous nation on the continent but also one of the most diverse, boasting over 250 distinct ethnic groups, each with its unique customs, traditions, and language. Nigeria landscape is a diverse as it’s culture, it’s got savannahs, rainforests, mountains, and coastlines. The Niger River meanders through the country and the Niger Delta is a hotspot for dense mangroves and wildlife. National parks and reserves are like a wildlife enthusiast’s dream, with elephants, lions, and an endless variety of bird species calling Nigeria home.

Things you didn’t know about Nigeria:

  • Nigeria is known for its vibrant film industry, Nollywood, which produces more movies than Hollywood and is the second-largest film industry in the world.
  • World Scrabble Champion: Nigeria has produced some of the world’s best Scrabble players, and Nigerian, Wellington Jighere, became the World Scrabble Champion in 2015.
  • Floating Art: The city of Lagos has a district called Makoko, where the residents have used discarded canoes to build stilt houses, creating a unique floating village.
  • Nigeria is home to the popular music genre known as Highlife, which is characterized by a fusion of various musical styles, including jazz and traditional African rhythms.
  • Mysterious Nok Culture: The Nok culture, which dates back over 2,000 years, produced intricate terracotta sculptures that have puzzled archaeologists and historians, as the culture disappeared without a clear explanation.

If you want to change up your BBQ, next time make these delicious suya! They are nice and spicy! It’s still steak so don’t overcook it!

Ingredients:

Suya:

  • 650 gr flank steak sliced into strips
  • 65 gr of peanuts
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp chilipowder
  • 2 tsp of ginger powder
  • 1 tbsp salt
  • 1 tbsp black pepper
  • wooden skewers (soaked in water for 1 hour so the sticks don’t burn)

Chopped Salad:

  • handfull cherrytomatoes
  • 1/2 cucumber
  • 1 red onion
  • parsley
  • salt
  • lemon juice

Recipe:

Suya:

  1. Process the peanuts in a food processor until they are chopped (not too finely, because i like a little texture on my suya). Then, add garlic powder, onion powder, chili powder, ginger, salt, and pepper to the processor and pulse to blend the ingredients. While the processor is running, slowly incorporate the oil until a thick paste is created.
  2. Mix the flank steak strips and the peanut mixture, ensuring an even coating. Cover the bowl and refrigerate for a minimum of 6 hours or, if desired, overnight.
  3. Preheat your grill to medium-high heat, which is approximately 230°C, or heat a grill pan over medium-high heat and lightly oil the grate. Skewer the short ribs, brush them lightly with oil, and season with a dash of salt. Grill the skewers, turning them occasionally, until they develop a light char and are nearly cooked through, which should take around 3 to 5 minutes.

Chopped salad:

  1. Chop all the onion, parsley, tomatoes, cucumber.
  2. Mix with all the rest of the ingredients
