86. Guyana: Egg Curry

The event that put Guyana on the map for a lot of people is the catastrophe that happend in 1978. Guyana was still a British colony back then. In the middle of jungle a cult called “Peoples Temple” settled and founded their own town “Jonestown” under the leadership of Jim Jones. A total of 909 Americans died in Jonestown, all but two from apparent cyanide poisoning, in an event termed “revolutionary suicide” by Jones and some members on an audio tape of the event and in prior discussions.

That is what put Guyana on the map nowadays there is much more to Guyana. Few places on the planet offer raw adventure as authentic as densely forested Guyana. Although the country has a troubled history of political instability and inter-ethnic tension, underneath the headlines of corruption and economic mismanagement is a joyful and motivated mix of people who are turning the country into the continent’s best-kept ecotourism destination secret. Georgetown, the country’s crumbling colonial capital, is distinctly Caribbean with a rocking nightlife, great places to eat and an edgy market.

Things you didn’t know about Guyana:

  • The official name of Guyana is the “Co-operative Republic of Guyana.
  • The national motto of Guyana is “One People, One Nation, One Destiny
  • The Omai Gold Mine in Guyana is one of the largest open-pit gold mines in South America.
  •  Slavery in the state was banned in 1834. There was a great demand for plantation workers after slavery in Guyana, which led to the immigration of the East Indians into the nation

57. East Timor: Caril Dos Pescadores

Welcome letter E! The continents of Asia and Oceania are the home of thousands of some of the most amazing species on earth. Here between these two continents there is an island where this couldn’t be more evident ‘East Timor’. Living it’s first few ages of independence this small territory is located on the far east of southern Asia between Indonesia and Australia, it is the home of an ancient civilization. They are descendents from Malaysian, Polynesian and Papuan people. They have strong believes that everything is connected to the nature in some way. The land changes from high tropical forests to savannah or to the incredible pristine beaches on the coast.

  • Over 16 different languages and more than 30 dialects are spoken in East Timor, a lot of them have a strong Portuguese influence.
  • There is a legend among people from East Timor that only a man with a bad soul will get eaten or bitten by a crocodile. This why most people aren’t terrified of crocodiles.
  • There are a least 9 bird (probably more) species that are exclusive to the island.
  • There are places in the mountains where scientists have never been. And it is almost certain that when scientists start researching there new species will be found.
  • During the ice age the islands stayed separated from the Asian continent, so there were nog big animals like tigers or elephants. Only the ones man brought for farming can be found on the island.

This is so good the sweet and sourness of the tamarind is really good!

28. Brunei: Curry with aromatic rice

If you ask someone to point Brunei Darussalam on the world map, most likely the person will get stumped and struggle! No wonder as this country is one of the smallest nations on earth that is located on the island of Borneo in South East Asia. Besides sharing its border with the state of Sarawak, Malaysia, it also faces the South China Sea in the North. Brunei’s economy is based on natural gas and oil. Luckily nature doesn’t suffer to much, there are still many beautiful rain forests to be found in Brunei. The main religion practiced in the country is Islam and Sharia laws are strictly adhered to.

Here are facts about Brunei:

  • Sultan Hassanal Bolkiah is well known for being a keen collector of cars. Once the sultan had more than 530 Mercedes-Benzes, 500 Rolls-Royces and 360 Ferraris in his car collection.
  • Table manners include eating and passing food with right hand only with the exception that while holding a heavy plate with a right hand, the left one can be used to support the right wrist
  • Pointing the index finger while in conversation is considered to be rude, instead using thumb to point is encouraged.
  • The 600 years old Sultanate of Brunei is the oldest Muslim dynasty in the region.

This curry has no specific name but I apparently it is very typical in Brunei, and so tasty!

Ingredients curry: 1 stick of sereh (lemongrass),  hand full of chopped coriander, 1 chili deseed and roughly chopped, thumb size piece of ginger roughly chopped, 1 large white onion roughly chopped, 2 cloves of garlic, zest en juice of 1 lime, stewing beef, 1 can (400ml) coconut milk, canola oil, turmeric to taste, 

Ingredients aromatic rice: 1 cup of rice, cinnamon stick, 4 cardemon pods. 

Put the sereh stick, coriander, chili, ginger, onion, garlic lime zest and juice in the blender and blend until it’s a smooth paste. Brown the beef in big pan with the canola oil. Add the the curry paste and fry a a little more for about 3 minutes. Add the coconut milk. Add bring to a boil. Then put in the oven 160 degrees C for about about an hour I let it sit a longer because I like my curry quite thick.

Ten minutes before serving you start the with the rice. Cook the rice as you normally would but add a stick of cinnamon and a stick of lemongrass.

16. Bangladesh: Chicken Korma

Bangladesh a country where the difference between rich and poor is incredibly large. Apart from that Bangladesh also has a lot of positive things.

Here are some things you didn’t know about Bangladesh:

  • The worlds largest beach is located in Bangladesh
  • It is immature to smile a lot. Hence the Bangladeshis tend not to smile much. (This would not be a country for me)
  • Women love to be as colorful and shiny as possible! It is their everyday life to wear colorful saree or saluar khamiz with matching shining earrings, necklaces, bracelets, make up and shoes. Yes, everyday! Whenever you step out your home, you need to look as good as possible, because others are looking at you, you know?
  • There are two typical questions that people ask each other every day:  “What did you eat? Did you take a shower?” Here everything is about eating! (I can relate to this, the first question my little brother used to ask in the morning was: Mom what’s for dinner tonight?) They eat a lot and in every meal there are lots of items on a table. And because it’s hot here, people sweat, so personal hygiene is very important.

I already love curry but this was extreme!

Ingredients: 1 kg chicken pieces, washed, 2 large onions, finely chopped, 1 1/2 tbsps ginger garlic paste, 1 large tomato, chopped, 1 tsp red chilli pwd, 1/4 tsp turmeric pwd1 1/2 tbsp lemon juice, salt to taste, 2-3 tbsps oil, chopped coriander leaves for garnish 

Dry roast: 1 tsp cumin seeds, 1″ cinnamon, 2 cardamoms, 5 tbsp grated fresh coconut, 8 cashew nuts, 1 tbsp roasted chickpeas

Roast: (in 2 tsps oil for 5 mts) 6-8 curry leaves, 8-10 shallots/sambar onions, 4 green chills, 3 tbsps chopped coriander leaves, 15 mint leaves

Make a paste of ingredients under ‘dry roast’ and ‘roast’ by adding a few tbsps of water and keep aside. Heat oil in a heavy bottomed vessel, add curry leaves and saute for few moments. Add the chopped onions and fry till transparent. Add ginger-garlic paste and saute for 3 mts. Add red chilli pwd, turmeric pwd and salt and combine. Add the chopped tomatoes and fry for 4-5 mts. Add the ground paste and cook over medium heat for 7-8 mts. Add lemon juice and the chicken pieces and combine. Cook without lid for 5-6 mts. Add 3 cups of water and cook with lid on simmer till the chicken is tender and the gravy thickens. Garnish with chopped coriander leaves. Turn off heat. Serve with rice
